So Stinkin’ Addictive – Pumpkin Bread with The UnKitchen Diva

Pumpkin-Bread

Three UnKitchen Diva posts in a row! I know, you ask yourself how can this even be possible, an UnKitchen Diva trifecta!! She blames the Slow Roasted Tomatoes. You see, the tomatoes lead to the Mexican Black Bean Chili, which lead to the perfect side accompaniment  - Downeast Maine Pumpkin Bread! This bread is like crack! Both times the UnKitchen Diva made this recipe, she ate one whole loaf in two days, all by HERSELF!! She doesn’t even like pumpkin.  Pumpkin pies, lattes, muffins… you can have them.  She won’t even go near them.  This, this bread is like frozen Thin Mint Girl Scout cookies – one can never have enough. Add to the fact that she got to use her KitchenAid Mixer (the one that she lusted over for years, for no apparent reason and her mother floored her and

The UnKitchen Diva Stirs Up a Pot of Mexican Black Bean Chili

Mexican Black Bean Chili

The UnKitchen Diva went on a dinner date the other night – she does occasionally get out! Within the first few minutes, her date commented, “You’re particular about your food, aren’t you?”  Now it wasn’t a full on When Harry Met Sally moment where it took 10 minutes get the full order in and everything had to be on the side, but the thing is, he was right.  The UnKitchen Diva IS particular about her food! How, you ask, does this tie in with chili??? It’s like this. The UnKitchen Diva has very strong opinions on what make a good chili.  The chili should be meaty and thick with lots of flavor, melty cheese and sour cream.  She does NOT like her chili hot but she does like it to have kick, a bit of a bite, if you will.

Beautiful, Beautiful, Beautiful Boy

EHS1

“Close your eyes, Have no fear, The monsters gone, He’s on the run and your daddy’s here, Beautiful, Beautiful, Beautiful, Beautiful Boy.” John Lennon – Beautiful Boy Life is a very funny thing.  It really is true, the more you live, learn and love, the more you stay the same.  Meeting this beautiful boy is a perfect example of that. Back in the day, I went to high school with his mom! Muffy and I are the same age but were a year apart in school.  I was a year ahead and wish I could say it was because of my brilliance. Really it all came down to the fact that I started school at age 4.  Our high school was tiny – no, really – really tiny! There were 300 students – not in each grade level – in

Back in July there was a message on my phone from Chris, otherwise known as Dad in the B Family. He was calling to set up a beach session for his kids and wanted to use a voucher he and his wife, Patty, had won at the local library auction 5 years ago! I was blown away that they still had the voucher and of course I was going to make this session happen! After a really good game of phone tag, we finally connected to go over the session details and setup a time/place. I KNEW this was my kind of family when he said “Sunday would be perfect for us. We’re all going to wedding and the kids will be clean that day.” Loved that!! When Chris and I originally spoke we talked about doing individual and group

Potty Training, Lobster and Leaking A/C Units!

Something clicked in my head as I pulled into the driveway and saw a portable potty chair. I didn’t realize the full meaning of what I was seeing until I walked into my parents’ house, greeted my sisters and was told that “we” were potty training Sanna this week. Welcome to the Sjursen family summer get together… This should really have come as no surprise to me. There is always chaos, adventure and fun to be had when even half of my family is in the same state. Why would I think it would be any different on this trip? One week every summer my entire family converges on my parents’ house for a week of beach, lobster and boating. I grew up in a small coastal town in Connecticut, the kind of town whose population doubles in the summer
